Course Description:
American Gastronomy traces the evolution of American eating habits. The course will research the influence of original native cultures, US geography, regional natural resources, immigrant culture/cuisine and specific historical and cultural events on the kinds of foods Americans eat today. Through this experience students will be able to recognize the cultural influences in a typical modern American meal. A study in family genealogy will be introduced to discuss the makeup of the student?s family culinary background and gain a greater appreciation of the individual student?s own cultural heritage. Prerequisites: (CUL 220 Contemporary Cuisine and CUL 240 Garde Manger) or BAK 280 Retail Practical Experience. Completes General Education Requirement:SC-I.
