Course Description:
This lab course will provide an opportunity for students to identify and understand the different uses of maple in both sweet and savory applications. Emphasis will be placed on using maple as a sugar in the development of flavors in savory food items such as soups, sauces, marinades and glazes. Additional emphasis will be placed on understanding maple as an inverted sugar and the applications in which it might be used. Specific sweet utilization areas will cover cookies, quick breads, fruits and pies, pastries and confections.
