Course Description:
This advanced baking and pastry course will focus on taking the previous skills learned, refining and applying them to current trends in the industry. Strong emphasis will be placed on displaying and presentation techniques. Through an exploration of the professional literature and associations, lectures, demonstrations, and hands-on applications, students will explore current baking industry trends and then build on methods and applications learned from previous baking classes to demonstrate those trends. Prerequisite: BAK 280 Retail Practical Experience.
